refinishing sashes

Refinishing some old windows. What does a person use on the inside non painted side for a finish that doesn't stick? Is Poly ok or is there something better?

I flush the front of the a/c with the original sash. I lower the storm window down to the top of the unit. Most of the outside vents are outside the storm window. Maybe a bit on the inside. I've used some of the plastic stuff. I get a few years out of it before it either stays compressed, or falls off.

I've got that cabinet painted, I have to finish up the other two doors. Once they get good and dry I'll hang them back up and take some more pics. Then I'll have all the other cabinets and drawers to tie into. What color/type hardware would look good on them? Any suggestions?

I have wood trim in my kitchen with wood doors, and wood floor. PO's have cheap wood cabinets in the kitchen from probably the 70's era. What would it look like if I painted them white? Or another color? Would it look odd since the rest of the kitchen is trimmed in wood? I can't afford new cabinets ...
