I would definitely NOT remove anything original. You can work with what you have. I have a wall of original kitchen cabinets (from 1892) and they blend in perfectly with the new cabinets. They are what people are most interested in when they come to my house.

Try wall liner paper. It will give you a smooth look and keep everything in place.
