Hey Angolito! Good to hear from you! I know the look you describe - antique tile without eased edges and no visible grout line. I'm not sure myself how to achieve that. My gut feeling would be to go for a very very thin grout line (using unsanded dark-colored grout), and using something like pennies...

When I've seen paint fail like you describe, indoors on plaster over a brick wall, the culprit as almost always been moisture (though sometimes I've seen it happen when a space has been unheated for a number of years in a cold climate, too). This moisture condition is sometimes called "rising damp"....

Someone has added a hood. Usually that's done to manage smoke - not usually as big an issue with coal - so perhaps that's an indication of some PO burning wood as well.
