The biggest problem with glueing up planks of wood is the interaction of grain stresses between each piece. whew So, when glueing them up you need to reverse the cup of the grain pattern to keep the "wow" from going all one way. I would warn against using MDF
Medium density fiberboard will fall apart relatively quickly if there is any water exposure.

This argument is could go on and on.... We have run into this issue countless times. So I'll thow in. on soap box Wood used for the homes you all love was cut from forests that had grown for a long time. "Old Growth". this wood is very dense, has tighter graining, higher tannin levels and less knots...
