Remove plaster from brick fireplace

I'm in the process of renovating my 1980's kitchen in my 1900 house and there is a unused chimney/fireplace behind the bulkhead and shallow pantry. After tearing off the bulhead I discovered that one wall of the unused chimney was studded and lathed, but the other two had 1/4 of plaster applied directly to the brick.

I want to expose the fireplace (depending on condition). Much of the plaster comes off in large pieces, but it there any advice to getting off the stubborn pieces and overall cleaning up the brick?

I hope that I don't get 95% off to discover the brick is in poor condition and I need to replaster it. I haven't removed the cabinets to see below, but am hoping that they didn't plaster all they way down to the floor.
