Uneven Floor Fix in Kitchen

Hi everyone. I'm new to working on houses and I have a question for you. I have an old house (1880) with a kitchen that was remodeled a while ago. Probably 80s or 90s. The floor has a slight curve in it. It curves up to a bit the last couple of feet to the door. I haven't measured the increase yet but it's probably around an inch.

I want to remodel my kitchen and put tile down. It's possible I will switch to another flooring that can just deal with the uneven floor if the fix is to much. How would I correct this or at least get it good enough to put tile on top of it? I have an idea how to fix floors that sink but not curve up. Suggestions?
