1720 Massachusetts salt box. Needs a bit of help

Hello, I'm trying to get many thoughts on my 1720's salt box house. The House is all post and beam with trunnels, and knuckles fitting like an old puzzle. Of the 2 bedrooms upstairs, 1 slants towards the chimney and the other away from it. I've heard 2 points of view. Some of the sagging, and slanting can be gently adjusted over time. The second view would be to keep it that way and just brace in place... Any help on things I can look forward to on my adventure into pre-America houses would be great
