Ooooh! I don't usually like stone counters in period kitchens, but yours look extremely good! I'd still lean towards wooden countertops though.

We went with quartz because it is long lasting and low (zero) maintenance. Wood might been a bit overwhelming with all the cabinets. We weren't a fan of laminate and solid surface because they were plasticy. Real stone was out because of price and maintenance. We have a butcher block type counter from the old kitchen that we are going to reuse as a vanity top (it is covered in poly, so it wasn't a 'true' butcher block).

We have wooden counters on top of late 70s/early 80s white IKEA style cabinets and they brighten things up quite a bit. They're definitely high-maintenance though, and there's no way on earth I'd ever want wooden countertops next to a sink EVER again.

The kitchen sink is finally installed! Wow, what an ordeal. The first time I assembled it all my joints leaked and I needed to make two extra trips into town for parts. It was difficult finding anything that would work with this sink because all the parts are non-standard sizes.

The taps came from http://www.signaturehardware.com We had good luck with a bath hand sprayer from them, so we took the plunge and bought a set of faucets. So far we are very pleased on it's functionality, and it looks good to boot! The local stores warned us on buying 'internet junk faucets' and instead suggested the $600+ models they sold
