Parsnip-rooted Chervil, Turnip-rooted Chervil
This chervil is grown for edible roots which resemble a carrot in shape and color. The plant grows best when seed is planted in sandy loams in the fall. Plant spacing, after thinning, is 1 to 2 inches with the rows 18 to 24 inches apart. The small roots are harvested after exposure to freezing to improve the flavor.
The roots are dug when the soil is dry.
