I would definitely NOT remove anything original. You can work with what you have. I have a wall of original kitchen cabinets (from 1892) and they blend in perfectly with the new cabinets. They are what people are most interested in when they come to my house. :D

Try wall liner paper. It will give you a smooth look and keep everything in place.
