Spray Foaming stone foundation?

We've been thinking about replacing the underfloor fiber insulation in the crawlspace underneath a small bedroom extension on our 1834 farmhouse.
Both this crawlspace and the main basement are fieldstone foundation with dirt floor.
Several spray foam folks came to do estimates and all suggested spraying the rim joists and the portion of stone that sits above ground level.

My question:
Is this bad in the same way that using portland cement to parge stone walls is bad? e.g. preventing the walls from properly weeping moisture?
