Kitchen Addition: What wood to use for trim.

Would it be typical to have fir trim in the kitchen, but oak throughout the rest of the main floor? We're adding on to our 100+ year old Foursquare and don't have the budget for oak, so I'm trying to figure out what will look best.

There isn't any painted trim in the rest of the house and I'm hesitant to have painted trim only in the addition (new kitchen, entry, laundry & pantry). Can I put a different species of stained trim in the addition and still keep the feel of the house consistent?
