As restaurant ranges become more popular in home kitchens, the line between commercial and residential appliances keeps getting fuzzier. Marketed as a commercial range, this dual fuel appliance from the DCS division of Fisher & Paykel has several features that endear it to the homeowner. A simmer element has a two flame burner. The low setting turns off a primary element so foods can be maintained at a steady 140-degree temperature with no scalding. A high speed burner provides 17,500 BTUs for fast cooking. The 4.7 cubic foot convection oven is self-cleaning and can accommodate large bake pans - up to 18" x 26". Price is less than $7,500 (December 2004).
