Sagging Floors

I just purchased a farmhouse built in 1820. I have a problem with bouncy floors caused by sagging floor joists. I was wondering what is the best way to correct this problem? What I was thinking of sistering the floor joist with new 2"x8"x16' (span 15') one on each side of the old joist and then lag bolted and screwed to the old joist. Using a screw jack to lift them to level. The issue/concern I have with doing this is the foundation is stone, thus I would have to remove stones to do this, is this safe to do? I am on the right track or is there another solution for this problem?
